Preparation
For the marinade, blend the achiote with onion, cloves, garlic, pepper, oregano, orange juice and salt.
Marina the fish with the previous preparation, about 20 minutes.
In a pan over medium heat, heat the oil and cook the fish for about 10 minutes or until they are cooked, crumbling with the help of two forks. Rectify seasoning.
Fill the chiles with the fish cochinita, serve with pickled purple onions and serve with corn tortillas.
