For the sweet and sour sauce, heat the pineapple juice in a pot over medium heat and add honey, sugar, tomato sauce, ground chipotle, hot sauce, season with salt and pepper, and cook for 10 minutes or until thickened. Cool and set aside. Season the fish with salt and pepper and coat it by passing it through flour, egg, and the crunchy Bimbo® breadcrumbs, ensuring it is completely covered.
