This rich way of preparing amaranth is something that you did not imagine, it is very simple to make and it is a very healthy and full of flavor breakfast. Prepare it and start your day full of energy.

Ingredients

4 portions
  • 1 cup amaranth, not inflated
  • 2 cups coconut milk
  • 2 tablespoons peanut butter, unsweetened
  • 1 tablespoon liquid vanilla
  • 4 dates, finely chopped
  • to taste Stevia
  • to taste cinnamon powder

Preparation

Soak the amaranth one night before. Drain the water and rinse it well.
In a pot add coconut milk, vanilla, peanut butter, stevia and dates.
Let it boil and lower the heat; cook for 10 to 15 minutes or until the amaranth is cooked.
Serve immediately and sprinkle with cinnamon.

TIPS

You can add fresh or dehydrated fruit to accompany. If you do not like it so dry you can add a little coconut milk when serving. You can substitute amaranth for quinoa.
