Make this delicious Avocado and White Corn Toast, a light and vegetarian recipe that you will love. For this preparation we recommend making the white corn (esquites) from scratch, so the flavor will be very fresh and rich tasting. Remember that before serving the white corn on the bread, you should dry them very well. Ingredients

4 servings
  • 1 teaspoonful of corn oil
  • 1/4 of Cup of White onion
  • 1 teaspoonful of garlic finely chopped
  • 1 Cup of corn White
  • 1 tablespoon of epazote finely chopped
  • 1 tablespoon of coriander finely chopped
  • 2 cups of chicken soup
  • 1 pinch of Salt
  • 4 pieces of box bread whole wheat
  • 1 piece of avocado ripe
  • enough of fresh cheese crumbled, to serve
  • enough of epazote to serve
  • enough of Classic Tajín® to serve

    Preparation

    For the white corn, heat the oil in a pan over medium heat and add the onion and garlic. Add the corn and cook a few minutes, add the epazote, cilantro and chicken broth. Cook 15 minutes or until the corn is soft and the liquid is completely reduced, season with salt, remove and let cool.
    On a skillet toast the bread on both sides until browned lightly.
    In a bowl, mash the avocados until you get a puree, spread each bread with a little avocado and add the white corn.
    Decorate with fresh cheese, epazote and finish with classic Tajín®.

    PRESENTATION

    Place the white corn on the bread with avocado and finish with fresh cheese and classic Tajín®.

    TIPS

    Dry your white corn very well at the time of cooking, so that, when serving, do not soak the bread with the liquid.
