For this Lenten season, do not forget to spoil your family, prepare these spinach croquettes with cheese. They bring a mix of cream cheese, Manchego and Oaxaca, with the perfect touch that the Bimbo ® Crunchy Breader will give you. They will fascinate you!

Ingredients

6 portions
  • 2 tablespoons oil
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon garlic
  • 3 cups spinach
  • 190 grams cream cheese, for croquettes
  • 1/2 cups manchego cheese, grated
  • 1/2 cups Oaxaca cheese, grated
  • to taste salt and pepper
  • enough flour
  • 2 eggs, smoothie
  • 1 cup Crunchy Bimbo ® Emperiser
  • 2 cups oil, to fry
  • 1 cup mayonnaise, for the dressing
  • 1 tablespoon onion, finely chopped, for dressing
  • 2 tablespoons gherkin, finely chopped, for dressing
  • 1 tablespoon fresh coriander, for the dressing

Preparation

Heat the oil in a pan and cook the onion with the garlic and spinach until the liquid is reduced. Season with salt and pepper and remove. Chill
In a bowl, add the cream cheese and add the spinach, the manchego cheese, the Oaxaca cheese. Season
With the help of your hands, form croquettes and breadcrumbs, passing through the flour, the egg and the Bimbo ® Crunchy Breader.
In a pot over medium heat, cook the croquettes in a pan over medium heat until golden brown. Remove and reserve.
For the dressing, mix the mayonnaise, onion, pickles, cilantro, season with salt and pepper and enjoy the croquettes.
