Spinach Croquettes with Cheese

For this Lenten season, do not forget to spoil your family, prepare these spinach croquettes with cheese. They bring a mixture of cream cheese, Manchego and Oaxaca, with a crunchy breaded of Bimbo® corn flakes. They will fascinate you!

Ingredients

  • 2 spoonfuls of oil
  • 2 spoonfuls of onion finely chopped
  • 1 tablespoon of Garlic
  • 3 cups of spinach
  • 190 grams of cream cheese for croquettes
  • 1/2 Cup of Manchego cheese grated
  • 1/2 Cup of Oaxaca cheese grated
  • to taste of salt and pepper
  • enough of flour
  • 2 pieces of egg smoothie
  • 1 Cup of Bimbo® corn flakes empanizer
  • 2 cups of oil to fry
  • 1 Cup of Mayonnaise for the dressing
  • 1 tablespoon of onion finely chopped, for dressing
  • 2 spoonfuls of pickle finely chopped, for dressing
  • 1 tablespoon of coriander for the dressing

    Preparation

    Heat the oil in a pan and cook the onion with the garlic and spinach until the liquid is reduced. Season with salt and pepper and remove. Chill
    In a bowl, add the cream cheese and add the spinach, the manchego cheese, the Oaxaca cheese. Season
    With the help of your hands, form croquettes and breadcrumbs through the flour, the egg and the Bimbo® corn flakes empanizer.
    In a small pot over medium heat, fry the croquettes for 5 minutes in hot oil or until golden brown. Drain on absorbent paper to remove excess grease.
    For the dressing, mix the mayonnaise, onion, pickles, cilantro, season with salt and pepper and enjoy the croquettes.
