Spaghetti with Calabacitas

This combination of cream, white wine, garlic, butter and pumpkins goes very well with spaghetti

Ingredients

  • 1/2 kilo of spaghetti
  • 1/2 kilo of zucchini in strips
  • 50 grams of Butter
  • 2 cloves of Garlic finely chopped
  • 3 spoonfuls of parsley
  • 2 cups of cream
  • 1/2 Cup of dry white wine
  • 1 teaspoonful of basil
  • 100 grams of Parmesan grated
  • 1 tablespoon of onion finely chopped

    Preparation

    In a saucepan melt butter and add onion and garlic, season 3 minutes. Add the zucchini and cook 8 minutes minutes in soft light, put the wine and let it evaporate the alcohol for 5 minutes over low heat.
    Put basil, cream, salt and pepper, leave a few more minutes and then turn it off and reserve. In a large pot put water to boil with salt and when it is boiling, put the pasta and cook until it is al dente, drain and return to the pot, put the sauce and a little Parmesan cheese, stir carefully.
    Serve in a dish and sprinkle with Parmesan cheese and garnish with basil leaves. Serve immediately.
    Garnish with chopped parsley.

    TIPS

    If it is done in advance we heat it in the oven for 20 minutes before serving.

    Hola Pau, te recomiendo que lo pongas al final para darle sabor y decorar tu platillo. Si lo pones antes se marchitará con el calor. Saludos
