This recipe for paella has chorizo, chicken, shrimp and vegetables. Make sure you follow the steps and do not move the rice so you do not beat it!

  • 1 1/4 liters fish soup
  • 12 big shrimps
  • 1/2 teaspoons saffron thread
  • 2 tablespoons Water
  • 100 grams chicken breast, boneless and skinless in medium pieces
  • 100 grams pork tenderloin, in medium pieces
  • 3 tablespoons olive oil
  • 100 grams sausage, without the skin in medium slices
  • 1 onion, big chopped
  • 2 cloves garlic, crushed
  • 1/2 teaspoons cayenne pepper
  • 1/2 teaspoons paprika
  • 1 red pepper, without seeds and sliced
  • 1 green bell pepper, seedless and sliced
  • 12 cherry tomatoes, matches in half
  • 375 grams paella rice
  • 1 tablespoon parsley
  • 2 teaspoons fresh tarragon, chopped
  • black pepper
  • lemons, at your service


Put the fish stock in a saucepan and bring to a boil.
Cook the shrimp for 2 minutes and then transfer to a plate and reserve.
Leave the broth over low heat.
Put the saffron in a bowl with the hot water for a few minutes.
Put salt and pepper on all the meat.
Heat the oil in a paella pan and fry the meat and sausage over medium heat, stirring, 5 minutes or until golden brown.
Sauté the onions stirring.
Add the garlic, cayenne, pepper and saffron with the water and stir for 1 minute.
Add the pepper and tomato and stir a couple of minutes more.
Add the rice and herbs and stir for 1 minute until everything is well mixed.
Put 1 liter of the broth and bring to a boil, lower the heat and let cook for 10 minutes uncovered.
Do not stir the rice during cooking, simply shake the paella pan about 2 times or when adding new ingredients.
Put salt and pepper.
Let cook another 10 minutes more until the rice is almost cooked.
Add a little more broth if necessary and then the shrimp. Let it cook another 2 minutes.
When all the broth has been absorbed and the rice at the base begins to be toasted, remove it from the heat.
Cover the paella with aluminum foil and let it rest for 5 minutes.
Serve with sliced ​​lemon.


You can add previously cooked clams at the time you add the shrimp.
