This delicious French soup is already a classic. It is plentiful and if served very hot it is comforting if you are sad or sick.

Ingredients

6 servings
  • 3 spoonfuls of Butter
  • 1 tablespoon of olive oil
  • 1 kilo of yellow onion finely slice
  • 1 teaspoonful of sugar granulated
  • 1/2 teaspoonful of sea ​​salt
  • 1 1/2 spoonfuls of wheat flours
  • 1 1/2 beef broth
  • 1 Cup of White wine
  • 1 stick of baguette bread
  • 150 Gruyere cheeses in slices
  • 150 grams of Manchego cheese grated
  • ground black peppers

    Preparation

    In a Pressure Cooker Express® place butter and oil. Add the onion and acitrona over low heat for 20 minutes, stirring occasionally. Increase the heat and add the sugar and salt. Continue moving until the onion is well browned.
    Add the flour, sprinkle it, and mix until it cooks completely.
    Add the beef broth and the wine. Close the Express® Pressure Cooker and add the pressure regulator, place it in the stove with a high flame for about 25 minutes or until constant steam comes out, lower the flame to medium and cook for 10 minutes.
    Remove the Express® Pressure Cooker from the heat, let cool, remove the pressure regulator, open the Express® Pressure Cooker, and that's it! Season with salt and pepper to taste.
    Meanwhile, it preheats a conventional oven at 220ºC (430ºF). Pour the hot soup into individual refractory bowls, place two toasted bread over the soup and cover with the cheeses.
    Gratin in the oven until it melts and browns lightly, serving immediately.

    TIPS

    Prepare the soup and freeze in bags with airtight seal to enjoy during the rainy and cold season.
